Course Description: 

Welcome to your senior capstone course! In this capstone, you will explore and participate in the concepts of community food security through community engagement and learning gardens. Students will also examine community service learning through the lens of sustainability leadership. During this term, we will work with the Learning Gardens Laboratory, a 12-acre garden education site located in Southeast Portland that provides K-12, university students and community members hands-on and place-based education in sustainable gardening, healthy nutrition, and permaculture. Class time will focus on the course themes and ways to create food justice through community engagement and learning gardens. The final projects focus on community-based work that aid LGL staff in their summer endeavors.

This capstone will be co-taught by Lukas Maurer (lmaurer@pdx.edu) and Megan Schneider (mss2@pdx.edu).
